Job description:
General Role Purpose (brief description of this job)
The Head Chef/ Chef I is responsible for ensuring that the standard and quality of the food production and the hygiene within the catering operation is maintained at the highest level at all times.
Qualifications (required for job) & Knowledge & Experience
  • High School Diploma .
  • Basic Education / Culinary.
  • Certification preferred Certificate in food safety.
  • Previous experience as a Head Chef or Kitchen Supervisor
  • 2 + years of experience within the hotel industry.
  • Communication and interpersonal skills.
  • Organizational skills and attention to detail.
  • Time management skills with a proven ability to meet deadlines.
  • Ability to function well in a high-paced and at times stressful environment.
  • Using logic and reasoning to identify the strengths and weaknesses of alternative solutions, conclusions, or approaches.
  • Hand-Eye Coordination: requires great knife skills. A steady hand will help you greatly.
    Core Specific Responsibilities & Expected Deliverables
    • Ensure that the food is prepared as per the planned menu and in line with instructions received from Head Chef.
    • Complete regular menu planning, menu cycles, commodity lists, and projected ordering according to menu cycle menus.
    • Instruct cooks or other workers in the preparation, cooking, garnishing, or presentation of food.
    • Comply with legal and company standards (HACCP, food safety, food hygiene, general safety at work and environment).
    • Monitor sanitation practices to ensure that employees follow standards and regulations.
    • Establish corrective actions when surveillance indicates a CCP that is not under control.

    • Inspect supplies, equipment, or work areas to ensure conformance to established standards.
    • Order or requisition food or other supplies needed to ensure efficient operation.
    • Determine production schedules and staff requirements necessary to ensure timely delivery of services.
    • Record production or operational data on specified forms.
    • Manage food, operating costs along with budget compliance in food cost analysis & forecasting
    • Kitchen staff development, manage work schedules; create a cohesive team of associates for culinary and catering staff.
    • Prepare daily requisition for the next day kitchen supplies considering forecasted man-days, menu, and stock balance in the kitchen and available items in store.
    • Ensure control measures are taken to reduce and effectively manage wastage.
    • Maintain and control all Food Storage areas ensuring correct storage & handling.Each person is responsible for the cleaning and hygiene of his designated work area.
    • Check that all kitchen equipment's is in working order and inform the Coordinator Catering Operations of any defects or faults.
    • Organizing duty roster of the staff.
    • Carry out other duties as requested or directed by the Coordinator Catering Operations.

        Operational Requirements
        Cobre Panama is a remote site. This exciting position is based on-site and will be focusing on driving and delivering operational accountability and ownership across various units at Cobre Panama site. Rosters and working hours may vary depending on business requirements.
        Environmental Responsibilities
        • Comply with current environmental regulations in Panama
        • Comply with the commitments contained in the Environmental Impact Studies and other additional studies in this regard, which apply to your area and activities.
        • Comply with the provisions of the Minera Panama Environmental Management System.
